Now, on to what you came for: Grammar. Should thank you ever be hyphenated? The answer, surprisingly, is yes. You don't need to do this when you're just saying "thank you" but when used as a noun or adjective, it needs a hyphen to make it clear that it's one item or one descriptor. For example, "thank-you note" should have this hyphen. "A quick thank-you" is a hyphenated noun. Don't write "thank you" as one word. It just doesn't look good. That's really the only reason not to do it.
